Ingredients:

  • 2 cups cooked, shredded chicken (rotisserie chicken or boiled and shredded chicken breast/thighs)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup blue cheese crumbles (or homemade ranch seasoning, see below)
  • 1/2 cup buffalo hot sauce (look for zero sugar, like Frank’s RedHot Original)
  • 1/4 cup melted butter
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked salt (or your favorite carnivore-approved salt)

Optional Add-Ins & Toppings:

  • 1/4 cup crispy bacon crumbles
  • 1/4 cup shredded mozzarella cheese (for extra gooeyness)
  • 1 tbsp chopped chives (if ketovore)
  • Extra blue cheese crumbles for garnish

Instructions:

  1. Preheat oven to 375°F.
  2. In a large bowl, mix cream cheese, sour cream, melted butter, buffalo sauce, garlic powder, onion powder, and smoked salt until smooth.
  3. Fold in shredded chicken and blue cheese crumbles (or ranch seasoning if using).
  4. Transfer to a baking dish and spread evenly.
  5. Sprinkle shredded cheddar cheese (and optional mozzarella) on top.
  6. Bake for 20-25 minutes, until bubbly and golden.
  7. Garnish with crispy bacon, extra blue cheese, or chives before serving.
