Ah, my dear carnivore famiglia! You know that Nonna loves her rich, satisfying, high-fat foods, but every once in a while, even the most devoted carnivore craves a little something special. Today, I bring you a full-sized, family-style Carnivore(ish) Tiramisu—a dessert so creamy, so indulgent, that you’ll swear it came straight from an old Italian trattoria.

But, of course, this is Nonna’s version, so we do things differently! No flour, no sugar—just pure, nourishing, animal-based goodness. Instead of traditional ladyfingers, we’re making a soft, sponge-like cake from cottage cheese and chicken flour (yes, trust me!). It soaks up the espresso just like the real thing while keeping this dessert high-fat, low-carb, and protein-balanced.

🍰 Carnivore(ish) Family-Style Tiramisu Recipe

Yield: 6-8 servings

Portion Size: ~1 square slice (about 3x3 inches)


🥩 Ingredients:

For the “Cake” Layer (Carnivore Ladyfingers):

  • 7 large eggs, separated
  • ½ cup full-fat cottage cheese
  • 8 oz. cream cheese, softened
  • ½ tsp salt
  • ¼ cup chicken flour (Simply blend dehydrated chicken breast into a fine flour)
  • ½ cup espresso or strong black coffee (for soaking)
  • 1 tsp vanilla extract
  • Optional: 1 tbsp powdered allulose (for a subtle sweetness)

For the Mascarpone Cream:

  • 1 ½ cups mascarpone cheese (room temperature)
  • ½ cup heavy cream
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • Optional: 1 tbsp powdered allulose or erythritol

For the Topping:

  • 1 tbsp cocoa powder (or finely ground coffee for a zero-carb option)
  • Optional: 1 oz 100% dark chocolate, grated

👩‍🍳 Instructions:

Step 1: Make the “Cake” Layer (Carnivore Ladyfingers)

  1. Preheat oven to 350°F and line a 12x18" baking sheet with parchment paper.
  2. Whip the egg whites to stiff peaks.
  3. In a blender or food processor, blend the cottage cheese, egg yolks, cream cheese, salt, chicken flour, and vanilla extract until smooth.  Add sweetener, if using.
  4. In a separate large bowl, gently fold together the egg white and egg yolk mixtures.
  5. Pour the batter onto the parchment-lined baking sheet and spread into an even layer.
  6. Bake for 22-27 minutes until set and lightly golden. Let it cool completely.

Step 2: Make the Mascarpone Cream

  1. In a large bowl, whisk the egg yolks, mascarpone, heavy cream, and vanilla extract until smooth and creamy.
  2. If using sweetener, mix it in until fully incorporated.

Step 3: Assemble the Tiramisu

  1. Slice the carnivore ladyfinger cake into squares that match the size of your serving dish; I use an 8x8" glass dish which is smaller at the bottom than at the top.
  2. Place the square into the bottom of your serving dish.
  3. Using a silicone brush, brush the espresso onto the cake layer.  Don't do too much!
  4. Spread half of the mascarpone cream evenly over the top.
  5. Repeat with another layer of cake and finish with the rest of the mascarpone cream.
  6. Dust the top with cocoa powder or finely ground coffee just before serving.

Step 4: Chill & Serve

  • Cover and refrigerate for at least 3 hours (or overnight for the best flavor).
  • Slice, serve, and enjoy with an espresso!

  • Extra fat? Add a layer of whipped heavy cream on top before serving.
  • More flavor? Add a splash of dark rum or coffee extract to the mascarpone cream.
  • Extra texture? Sprinkle crushed pork rinds on top (yes, really!).
